Black-eyed beans stewed in red palm oil, served with fried ripe plantain and often with gari.

The name comes from the two red things on the plate: the palm oil in the beans and the reddened, caramelised plantain.

In its basic form it is vegetarian, cheap and extremely good — one of the best value meals in Accra. Check whether fish or meat stock has been used if that matters to you.
